Creamy Cauliflower Soup

You will need…

  • 1 medium head of cauliflower
  • 1/2 small white onion
  • 1 large clove garlic
  • 1 Tbsp. butter or oil
  • 4 cups broth (bone broth, beef, chicken or veggie)
  • 1/2 cup cashews
  • 2 Tbsp. nutritional yeast or parmesan cheese
  • spices: /4 tsp. garlic powder, 1/4 tsp. onion powder, salt & pepper
  • Toppings: sprinkle of sprouts, cheese or bacon

Directions:

Roughly chop cauliflower and add it to a pot with 2 cups of broth. Cover and cook for about 10 minutes on medium-high heat until cauliflower is tender. When done cooking remove cover and let cauliflower cool for a little.

While the cauliflower is cooking, sauté garlic and onions in a separate pan for a few minutes until caramelized. Season with salt and pepper.

Add cauliflower, onions and remainder ingredients (besides toppings) into a high speed blender or food processor and blend on medium high for 5-6 minutes.

Pour into a bowl, top with toppings and enjoy!
