
You will need…
- 2 cups almond flour
- 1/3 cup monk fruit
- 1/2 cup softened butter
- 1 tsp. vanilla
- optional: a few drops of butter extract
- pinch of salt
Directions:
Pre-heat oven to 350 F and line a cookie tray with parchment paper.
In a bowl mix together dry ingredients (almond flour, monk fruit and salt). Then add in wet ingredients (softened butter, vanilla extra, and butter extract) and mix with hands to form a dough. The dough might be a little crumbly and that’s ok… it should still stick together when forming the cookie.
To make the cookies take tablespoon size pieces of the dough, roll into a ball and press down into a cookie shape.
Bake in the oven for about 20 minutes or until edges are lightly browned. Make sure to let cookies firm up before you dive in!
