You will need…
Meat Loaf
- 1 pound ground turkey
- 1 cup chopped celery
- 1 cup chopped onion
- 1/3 cup chopped carrots
- a drizzle avocado oil
- 1/4 cup low sodium beef broth
- 1/3 almond flour
- 1 egg
- seasonings to taste: salt, pepper, onion powder, garlic powder
- fresh herbs to taste: rosemary, thyme, parsley
- 3/4 tsp. worcester sauce
Gravy
- 8 oz. container of portobello mushrooms
- 2 Tbsp. butter
- 1/4 tsp. xanthan gum or corn starch
- 2 cups low sodium beef broth
- 1 splash cream (heavy cream, half and half or coconut cream)
- 1/4 tsp. worcester sauce
- seasonings to taste: salt, pepper, garlic powder, onion powder
- fresh herbs to taste: rosemary, thyme
- drizzle avocado oil
- 1/4 cup water
- 1 tsp. monk fruit
Directions:
Turkey Meatloaf: Pre-heat oven to 350 F. In a pan cook onion, celery, and carrots in a drizzle of avocado oil for a few minutes until veggies softened. Add beef broth and let it simmer for a few minutes. While that’s simmering, in a bowl add the dry ingredients (almond flour, spices, herbs) to the turkey. Then add egg and the cooked veggies (carrots, onion and celery) to the turkey mixture. Add worcester sauce to the mixture and mix it all up with your hands.
Form the meat into a loaf shape and place on a baking sheet or into a loaf container and bake in the oven for 50 minutes or until turkey reaches temperature of 165F.
Gravy: While the turkey meatloaf is the in the oven slice up the mushrooms and add to a pan with a drizzle of avocado oil and let it cook for a few minutes. Then add 1/4 cup water and let it cook down for a few more minutes. Remove mushroom and juice and set aside in a bowl. Add 2 Tbsp. butter to pan and melt on medium to low heat. Once it’s almost fully melted add 1/4 tsp. xanthan gum or corn starch and continually whisk for about 2-3 minutes until it starts to thicken up. Add 2 cups beef broth and keep whisking continuously for another couple of minutes until everything is smoothly combined. Add a splash of creamer and add the mushrooms with the juice back in, stir well. Then add the worcester sauces and seasonings and fresh herbs to taste. Keep stirring until it reaches the gravy texture you desire.
