You will need…
Makes one serving
- 1 eggplant
- Marinara or pizza sauce ( I like the brand Rao’s)
- Cheese (shredded or fresh mozzarella)
- 3 raw chicken tenders
- 1/4 cup almond flour
- 1 egg
- 1/4 tsp. of each spices black pepper, onion powder,
- garlic powder, seal salt (& any other spices you like eg. oregano)
(makes one serving for chicken, multiply recipe for more)
Directions:
Eggplant: Slice eggplant to make 1/2″-3/4″ circles. Place on a baking sheet with parchment paper and spray with avocado oil. Place in the oven at 400 F for 35 minutes. After 35 minutes take out of the oven, top with sauce and
cheese and place back in for about 5 minutes or until
cheese melts.
Chicken: Combine almond flour with spices and whisk egg. Dip chicken in egg, then almond flour. Heat up a pan with avocado oil and brown chicken by cooking it for about 3-4 minutes on each side. Then place in the oven with the eggplant at 400 F for about 12-15 minutes or until cooked through.
