
*makes 2-3 servings*
You will need…
- 1 pound raw thin chicken
- 3 bell peppers
- 1/2 yellow onion
- 1 Tbsp. avocado oil
- guacamole (store bought or homemade)
- optional carb: 1/2 cup brown rice or a serving of a wrap of your choice per person
- fajita seasoning (store bought or homemade)
Homemade Fajitas Seasoning Blend:
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 2 tsp. smoked paprika
- 2 tsp. chili powder
- 2 tsp. ground cumin
- 1 tsp. monk fruit or sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. cayenne pepper
Combine all spices together well.
Homemade guacamole:
- 1 avocado
- 1 small tomatoes, chopped
- 3 Tbsp. red onion, chopped
- 1 small clove garlic, minced
- squeeze of lime
- salt and pepper to taste
Mash avocado with a fork and mix in other ingredients.
Directions:
Pre-heat your oven to 400 F. In a big mixing bowl add all the ingredients for the fajita seasoning blend and mix together. Slice your bell peppers and onions and cut your chicken into stripes. Add your chicken and peppers to the mixing bowl and coat well with seasoning.
Place your chicken and veggies on a baking sheet with parchment paper and place in the oven for about 25 minutes or until chicken is fully cooked (165F).
Pair with guacamole, jalapeños sauce (the one from Trader Joe’s is so good!) and an optional serving of carbs such as brown rice or a wrap of your choice.
