Lower Carb Chocolate Chip Banana Bread

You will need…

Makes 2 small loafs (1/4 loaf can count as a carb and fat serving)

  • 2 ripe bananas
  • 1 1/2 cups almond flour
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 3/4 tsp. baking powder
  • pinch of salt
  • 1/2 cup sugar free chocolate chips
  • optional: 1/4 cup monk fruit for extra sweetness

Directions:

Pre-heat your oven to 375F. Combine all the ingredients together in a bowl.

Grease your bread loaf tins with an oil spray or butter.

Distribute your batter into the bread loaf tins evenly (I used two small tins so if you use I big one you make need to cook for a little longer.)

Bake in the oven for about 35-40 minutes or until you pass the knife test.

Knife test: insert the knife in the bread and if it comes out clean it’s done.

Make sure to let cool before cutting.
