Taco Bowl

You will need…

Makes one servings

  • 1/3 lbs. ground turkey, chicken, lean beef or venison
  • 1 cup shredded lettuce OR cauliflower rice as base
  • 1 bell pepper, sliced
  • 1/4 yellow or white, sliced
  • salsa or pico de gallo
  • 1/2 avocado or 1/4-1/3 cup shredded cheese
  • 1/2 cup beans (can sub for corn or rice)
  • taco seasoning
  • seasonings: salt and pepper
  • Optional: top with cilantro, jalapeños and/ or greek yogurt

Directions:

Place a pan on medium heat and spray with oil. Add in sliced peppers and onion, season with salt and pepper and cook until soft. Remove from pan and set aside.

Add to same pan ground turkey and cook until there’s no more pink. Add taco seasoning.

Add base of lettuce or cauliflower rice (or both) to a bowl. Top with remainder of ingredients.

My favorite way to cook cauliflower rice: (you can do this while the veggies and meat are cooking!)

Place frozen cauliflower rice on a baking sheet at 450F until crispy. Remove from the oven and add oil spray, garlic powder, onion powder, salt, pepper and place back in the oven for 5 minutes. 

Note: You can easily skip the beans and make carb free
