Spaghetti Squash Primavera

Makes one serving

You will need…

1-2 cups spaghetti squash

4-5 oz. chicken

1/2 cup frozen broccoli

1/2 cup cherry tomatoes

1/2 small onion

2 Tbsp. olive oil

1 clove chopped garlic

salt and pepper

marinara sauce (optional)

Directions:

Spaghetti Squash: Poke holes in the spaghetti squash and place in the oven for 8-14 minutes (depending on size). Remove squash and slice in half lengthwise. Remove the seeds and start shredding the squash to make “spaghetti” strands.

Heat up garlic, onion and oil in a pan for about 3 minutes. Slice tomatoes in half, add to the pan and let cook for another 5 minutes. Cube or shred chicken and add to a pan. Add frozen broccoli until heated through. Season with salt and pepper and place over spaghetti squash. Add marinara sauce if you want to make it a red primavera!
