
Makes one serving
You will need…
- 2 eggs
- 1 slice bacon, chopped
- 1/2 cup broccoli, chopped
- 2 Tbsp. onion
- 1 Tbsp. oil
- salt and pepper
Directions:
Add oil to pan. When oil is hot add broccoli and onion. Season with salt and pepper and cook until soft.
When veggies are almost soft add slice of chopped bacon to the pan and let cook through. Once bacon is cooked add in 2 whisked eggs.
After 1-2 minutes fold over the eggs to create an omelette.
