Sushi Lunch Bento Box

Makes one serving

You will need…

  • 4-5 oz lox
  • 1/2 cup edamame
  • 1/2 cup rice
  • 2 cups chopped cucumber
  • 1/2 avocado
  • 2 Tbsp. coconut aminos
  • One pack seaweed snacks
  • Everything but the bagel seasoning to taste

Directions:

Microwave frozen bag of rice until fully cooked.

Place all ingredients on a plate or in a container.

Note: it can be fun to take seaweed paper and wrap lox and rice in it and then dip in coconut aminos!
