Stove Top Cauliflower Oats

Makes 1 serving

You will need…

  • 1/4 cup uncooked oats
  • 3/4 cup frozen cauliflower rice
  • 1 serving protein powder
  • 1 Tbsp. flax seeds
  • 1/2 cup unsweetened almond milk
  • splash of vanilla extract
  • dash of salt
  • cinnamon to taste
  • 1 Tbsp. nut butter mixed in or on top
  • optional topping: 1/2 fig or 2 Tbsp. berries (keep fruit limited since the oats count as a carb)

Directions:

Add all ingredients to a pan on medium heat.

Cook oats for about 5-7 minutes, stirring occasionally.

Tips:

Make multiple servings in advanced to have throughout the week!

Can switch up protein powder flavor, add stevia and monk fruit to taste and swap out nut butters types for variety.
