You will need…
- 1 serving protein powder (20 grams protein)
- 1/2 cup unsweetened almond milk
- 1 Tbsp. flax seeds
- 1/2 cup frozen cauliflower rice
- 1/2 cup ice
- 1 Tbsp. coconut oil
- 2 tsp. cacao powder
- optional chocolate shell sweetener: monk fruit or stevia to taste
Directions:
Blend together protein, almond milk, flax seeds, cauliflower rice and ice on high speed (for at least 60 seconds) until it creates a thick smoothie you can eat with a spoon. Place smoothie in a bowl.
Note: liquid amount may need to vary depending on type of protein powder and blender. Start with a little and add more as needed. You only want enough liquid so the ingredients blend.
For the chocolate shell, microwave coconut oil for about 1 minute until completely liquid. Stir in cacao powder until evenly combined. Add in optional monk fruit or stevia sweetener to taste. I personally find my smoothie is sweet enough where I don’t need to add a sweetener to the shell but if you want, you can! Pour chocolate syrup on top of smoothie bowl. Place in freezer for a few minutes or until shell hardens (this happens quickly.)
