PB & J Cauliflower Oats

Makes 1 serving

You will need…

Oats:

  • 1 serving vanilla protein powder (20 grams protein)
  • 1/2 cup unsweetened almond milk
  • 1 cup frozen cauliflower rice

Strawberry jam:

  • 1 Tbsp chia seeds
  • 1 cup strawberries
  • squeeze of lemon
  • optional sweetener to taste

Toppings

  • 1 Tbsp. peanut butter

Directions:

Add all oats ingredients to a pan on medium heat.

Cook oats for about 5-7 minutes, stirring occasionally.

While oats are cooking cut strawberries into cubes and place into a pot. Put stove on medium-high heat until berries boil. You may need to add 1 Tbsp. water if berries are sticking to the pot.

As berries are getting softer mash them with a wooden spoon to create preserves. Once berries boil, place heat on simmer for 1-2 minutes. Add chia seeds, lemon and optional sweetener.

Mix your strawberry jam and peanut butter into your oats.
