Cilantro Aioli

Counts as fat. 1 Tbsp. aioli is equivalent to 1 Tbsp. oil.

You will need…

  • 1 cup avocado oil
  • 1 cup cilantro (with stems)
  • 2 cloves garlic
  • 2 egg yolks
  • 2 tsp. dijon mustard
  • juice from 1 lemon
  • zest from 1/2 lemon
  • salt and pepper to taste

Directions:

Add all ingredients to a food processor or high speed blender and blend until it creates a creamy texture. Tope on your favorite tacos or use as a dip for veggies!
