Stuffed Sweet Potato

Makes 1 servings (full meal)

You will need…

  • 1 small sweet potato
  • 4-5 oz. pre-cooked chicken
  • 2 Tbsp. cheese
  • 1/4 avocado
  • 2 cups snackable veggies: eg. jicama and bell peppers
  • optional: dollop of greek yogurt & sriracha

Directions:

Poke sweet potato with holes and bake in the oven at 425 F for about 45-min 1 hour or until tender.

When sweet potato is done cooking make a slit in the top, open the split and fluff the inside to make space for the toppings. Stuff with chicken and cheese. Place bake in the oven for 5 minutes or until cheese melts.

Top with avocado, greek yogurt and sriracha and pair with snackable veggies of your choice!
