Cheese Cake Stuffed Sweet Potato

Makes 1 servings (full meal with carb)

You will need…

  • 1 small sweet potato (or 1/2 larger potato)
  • 1 cup plain non-fat greek yogurt or cottage cheese
  • 1 Tbsp. nut butter
  • cinnamon or pumpkin pie spice seasoning
  • optional: stevia or monk fruit to taste

Directions:

Pre-heat oven to 400 F. Wash and dry your sweet potato and poke several holes with a fork. Add a drop of avocado oil on the potato and gentle rub all over. Sprinkle with a little salt. Bake in the oven for 45 minutes or until soft.

Optional: you can add monk fruit or stevia to your greek yogurt or cottage cheese if you want it to be sweeter. For greek yogurt whisk the sweetener in with a whisk and for the cottage cheese blend the cottage cheese with the sweetener so it becomes creamy.

Split open the top of the sweet potato lengthwise and stuff with your yogurt / cottage cheese and nut butter. Then sprinkle with cinnamon or pumpkin pie spice.

Note: I like to make a bunch of potatoes for the week to use for this meal and others! You can also just pop the sweet potato in the microwave for 5 minutes for a quick hack.
