Apple, Arugula & Prosciutto Salad

Makes 1 servings (full meal with carb)

You will need…

  • 2 cups arugula
  • 4-5 oz. rotisserie chicken
  • 1 small apple, chopped
  • 1-2 slices of prosciutto
  • 1 Tbsp. balsamic vinegar
  • 2 tsp. extra virgin olive oil
  • 1 tsp. drizzle of balsamic reduction (optional)

Directions:

Shred or chop up pre-made rotisserie chicken.

Slice one small apple and 1-2 pieces of prosciutto.

Add all ingredients to bowl (besides balsamic reduction).

Mix ingredients together and drizzle balsamic reduction on top.

Feel free to sub apple for another fruit of choice like figs and chicken for another protein of choice like steak or shrimp!
