Protein Pancakes

Makes 1 serving (full meal no carb)

You will need…

  • 1 scoop vanilla protein powder
  • 1egg
  • 1/4 tsp. baking powder
  • 1 Tbsp. acacia fiber (optional)
  • 1/2 cup water
  • Fat topping: 1 Tbsp. nut butter or butter
  • Optional topping: 2 Tbsp. berry chia jam (Up to 2 Tbsp. of this jam is free. If using more count as carb)

Directions:

Mix protein powder, egg, baking powder, acacia fiber and water in a bowl. This recipe uses pea protein powder. Depending on your protein powder you may need more or less water. Slowly add until it creates a pancake batter like consistency like pictured below.

Heat a pan on medium heat and spray with oil. Cook pancakes for a few minutes on each side. They should be easy to flip by the time you go to flip them. If they are breaking apart when you go to flip wait a little longer.

Top pancakes with peanut butter and jam or butter and sugar free maple syrup and enjoy!
