
Makes 1 meal without carb
You will need…
- 1/2 block 14 oz. extra firm tofu
- 1 Tbsp. hot sauce
- 2 tsp. corn starch
- spices: salt, pepper, paprika, garlic powder, onion powder to taste
- 1/2 avocado
- 1 bag frozen cauliflower rice (without carbs like peas, lentils, beans or corn unless counting as carb for meal). Season as desired! I love the Mexican Cauliflower rice from Trader Joe’s.
Directions:
Wrap tofu in a towel, put on a plate and place something heavy over it to let excess water drain from tofu. You can do this ahead of time to save time.
Cube tofu and mix in bowl with corn starch. Then add hot sauce and spices to taste. Place in the air fryer at 400F for about 18 minutes or until cooked to your liking. If using the oven bake at 400F for 25 minutes and then broil at the end for a few minute if you like them crispier.
Heat up frozen cauliflower rice on the stove or in the microwave. Place cauliflower rice, tofu and 1/2 avocado on your plate and enjoy!
