
Makes 1 full meal without carb
You will need…
- 1 bag Shiritaki or kelp noodles
- 4-5 oz. pre-cooked chicken
- 1 bulb garlic
- 1 cup dinosaur kale, chopped (can also sub for regular kale or spinach)
- 1/2 cup cherry tomatoes
- 1 Tbsp extra virgin olive oil
- seasonings: salt, pepper and onion powder to taste
Directions:
Use a sharp knife to cut 1/4-1/2 inch from the top of the garlic cloves. Wrap the garlic in tin foil with the open garlic cloves facing up. Drizzle with a drop of oil and season with salt and pepper. Close tin foil and bake in the oven at 400F for about 45 minutes or until cloves are lightly brown and soft.
When garlic is soft, cool and remove garlic cloves from skin. Add to a small bowl with olive oil, salt, pepper and onion powder to taste and mask up with a fork.
In a pan saute kale and tomatoes in oil spray, salt and pepper. While veggies are cooking make noodles.
Shiritaki noodles come ready to eat. Just make sure to rinse them well in a strainer before adding to the pan of veggies.
Kelp noodles need to be boiled in water with 1 tsp. baking soda for 3-5 minutes, until soft.
Add noodles to the pan with the veggies to heat up. Add garlic pasta and chicken to noodles and veggies and mix well.
