
Makes 1 serving (full meal with carb)
You will need…
- 4-5 oz.chicken breast
- 2 cups spinach or mixed greens
- 1/2 cup mushrooms
- 1/4 avocado
- 2 Tbsp, roasted red pepper dip (or buy pre-made)
- 1/2 cup sweet potatoes
- balsamic vinegar
- salt, pepper, onion powder, garlic powder, paprika
Directions:
Pre-heat oven to 450F.
Sweet potatoes: Cube sweet potatoes, spray with avocado oil and season with salt and pepper. Place in the oven to bake for 35 minutes or until cooked to your liking.
Chicken: Cube chicken breast, spray with avocado oil and season with salt, pepper, paprika, garlic powder and onion powder. Place in the oven and cook for 20 minutes or until it reaches an internal temp of 165F.
* Swap chicken with tofu for a vegetarian alternative!
Mushrooms: Spray pan with avocado oil and add mushrooms to pan over medium heat. Season with salt, pepper, garlic powder, onion powder and a drop of balsamic vinegar. Cook for 7-10 minutes until soft.
Assemble ingredients together in a bowl! Optional: squeeze some fresh lemon juice over bowl.
