Salmon Sushi Bowl

Makes 1 serving (full meal with carb)

You will need…

  • 4-5 oz. salmon filet
  • 1/2 cup brown rice
  • 1 Tbsp. kewpie mayo
  • 1 Tbsp, coconut aminos
  • 1 tsp. sriracha
  • 1 packet seaweed snacks
  • 1 cup cucumbers, sliced
  • 1/2 cup shredded carrots
  • optional: scallions for garnish

Directions:

Heat up frozen rice in the microwave. Microwave salmon until warm. Mash together in a bowl salmon, rice, mayo, coconut aminos and sriracha. Fill seaweed paper with salmon mixture and veggies and enjoy!

Feel free to swap kewpie mayo for any mayo of choice. Or skip the mayo all together and add 1/4-1/2 avocado.

Note: If you want to skip a carb at this meal you can swap the brown rice for cauliflower rice.
