Chicken Pesto Bake

Makes 1 servings (full meal without carb)

You will need…

  • 4-5 oz. chicken breast
  • 2 Tbsp. pesto sauce
  • 1 cup eggplant
  • 1 cup cherry tomatoes
  • avocado oil spray
  • seasonings: garlic salt & pepper

Directions:

Pre-heat oven to 400F. Cube eggplant. In a small oven safe dish, place eggplant and cherry tomatoes around the edges. In the center place your chicken breast. Spray protein and veggies with avocado oil spray and season with garlic salt and pepper. Spread pesto sauce over chicken.

Optional: add a little mozzarella cheese on top of chicken. Bake in the oven for 20-25 minutes or until chicken is fully cooked.

Note: I recommend getting store bought pesto to save time. Look for ones ideally made with olive oil or avocado oil over other oils!
