Birthday Cake Overnight Oats

Makes 1 serving (full breakfast with carb) – if having for lunch or dinner make sure to add a side of veggies

You will need…

  • 1/2 cup greek yogurt
  • 2 Tbsp. chia seeds
  • 1/4 cup oats
  • 1 scoop vanilla protein powder (or add another 1/2 cup greek yogurt to the icing)
  • splash of cake batter or vanill extract
  • natural sugar free sweetener to taste (eg. Stevia, monk fruit, Swerve- I like confectioner sugar best but any kind works)
  • natural sprinkles
  • almond milk

Directions:

In a container add your oats, chia seeds, a dash of cake batter or vanilla extract, protein powder and almond milk. You want to add just enough milk so it’s a little liquidy so that the chia seeds can soak up the liquid. The amount varies depending on your protein powder but it typically winds up being about 1/2-3/4 cup. Place your oats in the fridge for at least 20 minutes while we make the frosting.

To make the frosting place your greek yogurt in a bowl and add your sweetener and another dash of cake batter or vanilla extract. Mix together well. Remove oats from the fridge and spread the frosting on top. Sprinkle on some natural sprinkles and enjoy as it or place in the fridge for a little longer for the yogurt to firm it up a little bit.
