Simple Chopped Salad w/ Low Carb Pita Chips

Pair 2 cups of salad with one serving of protein for a full meal with carb

You will need…

Salad:

  • 1 small head of romaine lettuce
  • 1 small head of green cabbage
  • 1 large cucumber
  • 1 cup cherry tomatoes
  • 1/2 small red onion
  • 1 low carb wrap
  • 1/4 cup green olives

Entire batch of dressing works well for this salad.

Air fried tofu:

  • 1 cup tofu
  • 2 tsp. corn starch (optional for extra crispiness)
  • whatever seasonings you like – I use salt, pepper, paprika, garlic powder, onion powder and hot sauce to taste

Chips:

  • one low carb tortilla
  • avocado oil spray
  • salt

Directions:

Salad:

Chop all ingredients well. Mix dressing into salad.

Wrap tofu in a towel, put on a plate and place something heavy over it to let excess water drain from tofu.

Air Fried Tofu:

Wrap tofu in a towel, put on a plate and place something heavy over it to let excess water drain from tofu.

Let sit for at least 20 minutes. Cube tofu and mix in a bowl with sesame seed oil and coconut aminos to season. Place tofu in an air fryer for 15-18 minutes at 400F.

Top tofu over salad.

Chips:

Cut wrap like a pizza into 6 pieces. Spray with avocado oil and sprinkle with sea salt. Place in the air fryer or oven at 400 F until crispy, about 5-7 minutes.
