Salad Boat

Makes 1 servings (full meal without carb)

You will need…

  • 4-5 slices turkey or chicken (or can sub for 1 cup cottage cheese)
  • 1/2 avocado, mashed
  • 2 large pieces of romaine
  • 1/4 cup roasted red peppers
  • 1 small baby cucumber, sliced
  • 6 cherry tomatoes, sliced
  • 2 Tbsp. pickled onions
  • drizzle of balsamic glaze

Directions:

Split ingredients between two romaine boats and drizzle with a balsamic glaze on top. Enjoy!

Note: Feel free to add in or sub out any veggies or protein for another option!
