Double Chocolate Breakfast Cookies

Makes 1 serving (full breakfast with carb if including berries, carb free without berries)

You will need…

  • 1 scoop chocolate protein powder
  • 1 Tbsp. cacao powder
  • 2 Tbsp. ground flax seeds
  • 1 Tbsp. nut butter
  • pinch sea salt
  • splash of vanilla
  • unsweetened almond milk or water (enough to create cookie dough texture)
  • 1 Tbsp. chocolate chips (ideally low sugar like Lilys)
  • 1/2 cup berries

Directions:

Pre-heat oven to 350 F. Add protein powder, cacao powder, flax seeds, nut butter, sea salt and vanilla to a small bowl. Slowly add almond milk until it creates a cookie dough like texture (this will prob be a few Tbsp. but go slow).

Form into cookies and place on a piece of parchment paper sprayed with oil spray. Bake in the oven for about 8 minutes. Let cook for a few minutes before eating. Serve with 1/2 cup berries on the side.
