
Makes 1 serving of a complete meal with carb
You will need…
- 4-6 oz. chicken
- 1 zucchini
- 1/2 cup cherry tomatoes
- 2 Tbsp. pesto sauce (I like the Trader Joes Vegan Cashew Pesto)
- 1/2 cup cooked bean based pasta ( like Banza or Explore Cuisine)
- drizzle of balsamic reduction (no more than 1 tsp.)
- basil for garnish
Directions:
Boil water and cook pasta as instructed on package. While pasta is cooking cut chicken into small cubes and cook in oil spray for a few minutes on each side until fully cooked. Season with salt and pepper.
While chicken is cooking, cut zucchini into coins and then into moon shaped bite size pieces. After chicken is cooked remove from the pan, re spray with oil and cook zucchini a few minutes on each side until warm and browned.
In a bowl combine all ingredients. Drizzle with some balsamic reduction and garnish with some chopped basil.
Note: can buy pre-cooked chicken for quicker cook time.
