Avocado Tuna Sandwich

Makes 1 serving of a complete meal with carb

You will need…

  • 1 can tuna
  • 1/2 small avocado
  • 1 stalk celery, chopped small
  • 1 Tbsp. red onion, chopped small
  • 1 Carbonaut bagel (can sub for 2slices light bread or royo bread, 1 low carb wrap or 1 light english muffin)
  • 1 tsp. dijon mustard
  • salt and pepper to taste
  • 2 cups snackable veggies: eg. cherry tomatoes and carrots

Directions:

Add tuna, avocado, onion, celery, red onion, dijon mustard., salt and pepper to a small bowl and mix well. Add tuna to bagel and eat with veggies on the side.
