Cookies & Cream Bites

2 count as a fat serving for meal.

You will need…

  • 1 scoop chocolate protein powder (I used this one)
  • 4 Tbsp. coconut flour
  • 2 Tbsp. black cacao powder (this make it taste more oreo like but you can use regular cacao powder)
  • 2 Tbsp. almond butter
  • 1 Tbsp. ghee (can substitute for an additional Tbsp. of almond butter but will need more water to create dough)
  • 2 Tbsp. monk fruit/erythritol
  • pinch sea salt
  • 1 Tbsp. white chocolate, chopped
  • Toppings: additional white chocolate and/or sugar free powdered sugar

Directions:

Mix protein powder, coconut flour, black cacao powder, monk fruit, sea salt and chocolate together.

Heat up ghee for 30 seconds and mix together with almond butter.

Add ghee and almond butter mixture to dry ingredients and slowly add water to the batter until it creates a dough like texture that sticks together when you create a ball. Start with 1 Tbsp. of water at a time and keep adding as needed. For beef protein I used a total of 5 Tbsp. but this may vary between protein powders.

Scoop out dough with a Tbsp. and roll into about 8 balls. Then either roll balls into sugar free powdered sugar or melted white chocolate. If dipping in white chocolate make sure to place in the fridge for a few minutes to harden. I like to place them in the fridge either way since I enjoy them more cold.

Store in the fridge!
