
Makes 1 serving for a meal.
You will need…
Base:
- 1 serving vanilla protein powder
- 1 Tbsps. peanut butter
- 2 Tbsp. psyllium husk
- 1 cup frozen cauliflower
- 1 cup unsweetened almond milk
Strawberry Jam:
- 1 cup strawberries
- 1 tsp. chia seeds
- 1/4 tsp. of vanilla extract
- Optional: sugar substitute of choice
Directions:
Place strawberries into a small pot and place on stove on high heat for about 5 minutes Mash berries to release juices every few minutes. Berries should come to a boil.
Put on simmer for 3 minutes. Add chia seeds, vanilla and optional sweetener. Shut off heat and place in the fridge to thicken and get cold. Make peanut butter smoothie base. Layer smoothie base and jam filling to create PB and J layers.
Notes:
For parfait do not substitute psyllium husk with another fiber option besides chia seeds since it helps act as a thickening agent.
It may be helpful to let peanut butter base chill in the fridge or freezer for a few minutes to thicken before layering the jam. It also tastes better colder!
