Pumpkin Chocolate Chip Muffins

1-2 count as a fat serving for meal.

You will need…

  • 1 cup pumpkin puree
  • 1/2 cup coconut flour
  • 1/4 cup psyllium husk
  • 2 eggs
  • 1/2 cup monk fruit/erythritol blend
  • 1/3 cup melted butter, ghee or avocado oil
  • 1/4 cup unsweetened nut milk
  • 1 Tbsp. pumpkin pie spice
  • 1 tsp. baking soda
  • pinch salt
  • 1/2 cup chocolate chips

Directions:

Blend all ingredients excluding chocolate chips in blender. Then mix in chocolate chips and divide evenly in a muffin tin. Batter should make about 12 muffins!

Bake in the oven at 350F for 30 minute or until fork comes out clean.
