Matcha Almond Butter w/ Raspberry Chia Jam Protein Breakfast Cookie

Makes 1 serving

You will need…

Cookie Base:

  • 1 serving vanilla protein powder
  • 1 serving collagen (optional)
  • 2-3 tsp. matcha powder – depending on how much you like matcha!
  • 2 Tbsp. coconut flour
  • 2 Tbsp. oats, blended
  • pinch sea salt
  • 1/4 tsp. baking powder
  • unsweetened nut milk – enough so it creates a cookie dough like texture
  • 1 1/2 tsp. almond or cashew butter or melted butter – typically 6-8 Tbsp.

Toppings:

  • 1.5 Tbsp. vanilla almond butter
  • 1 tsp. low sugar raspberry chia jam (homemade or store bought)
  • Optional: a sprinkle of monk fruit / erythritol blend on top

Directions:

Pre-heat oven to 350F. In a small bowl mix together all cooke base ingredients until it forms a dough. Create a ball with the dough and then mold into a cookie shape. Place on a non-stick baking sheet and place in the oven for about 20 minutes or until firm to the touch.

After removing cookie from oven, spread toppings over the top surface.
