Warm Chicken Apple Poppyseed Salad

Makes 1 serving of a complete meal with carb

You will need…

  • 4-6 oz. chicken breast, uncooked (or used pre-cooked for shortcut)
  • 2 cups shaved brussels sprouts
  • 1 small green apple, chopped
  • 1-2 Tbsp. low sugar poppyseed dressing (I like this one)
  • oil spray (avocado or olive)
  • optional: scallions for garnish
  • seasonings: salt, pepper, garlic powder, onion powder, paprika

Directions:

Pre-heat oven to 375F. Place brussels sprouts on a baking sheet and coat with oil spray. Season with salt, pepper, garlic powder and onion powder and place in the oven for about 30 minutes or until crispy.

While the brussels sprouts are in the oven, take your uncooked chicken breast and pat it dry. Season heavily with garlic powder, onion powder, paprika and a little salt and pepper. Place on a cast iron skillet (preferably) or pan seasoned with oil spray and cook on one side for about 5 minutes. Flip your chicken and then place your pan directly in the oven for about 15 minutes or until chicken is fully cooked.

In a bowl add the brussels sprouts, chopped apple, chicken and dressing. Mix well and top with scallions.
