
Makes 1 serving of a complete meal with carb
You will need…
- 4-6 oz. shredded rotisserie chicken
- 2 cups arugula
- 1/2 small apple, chopped
- 1/4 cup quinoa, cooked
- 1 tbsp. pumpkin seeds
- 1 tbsp. sunflower seeds
- 1-2 Tbsp. low sugar dressing of choice (I like this poppyseed one)
Directions:
Assemble all ingredients to a bowl. Mix well and enjoy!
