Cheesy Broccoli Breakfast Bowl

Makes 1 serving

You will need…

  • 2 eggs
  • 3-4 slices turkey bacon
  • 1/2 cup potatoes, chopped
  • 2-4 tbsp. shredded cheese
  • broccoli
  • oil spray
  • salt and pepper

Directions:

Roast the potatoes & bacon

  • Preheat oven (or air fryer) to 400°F.
  • Toss chopped potatoes with oil spray, salt, and pepper.
  • Place potatoes and turkey bacon on a baking sheet (or in the air fryer).
  • Cook until golden brown: about 15 minutes in the air fryer or 25 minutes in the oven.

Cook the eggs

  • Spray a pan with oil and cook 2 eggs to your preference (scrambled, fried, or poached).

Cook the broccoli

  • Option 1: Roast in the oven with oil spray, salt, and pepper.
  • Option 2: Sauté on the stove with oil spray, salt and pepper.
  • Option 3: Microwave with a splash of water until tender.
  • In the last few minutes of cooking, sprinkle cheese over the broccoli so it melts.

Assemble the bowl

  • Chop the turkey bacon.
  • Add potatoes, broccoli, eggs, and turkey bacon into a bowl.
