Apple Pie Smoothie Bowl

You will need…

  • 1 apple, chopped
  • 1 tsp. cinnamon (1/2 for cooking the apple and 1/2
  • in the smoothie)
  • 1 tsp. coconut oil
  • unsweetened vanilla almond milk
  • 1 scoop vanilla protein powder
  • 2 Tbsp. ground flax seeds
  • 1/2 tsp. cinnamon
  • 1 tsp. vanilla extract
  • 1/2-1 cup frozen cauliflower rice
  • 1 Tbsp. almond butter

Directions:

Heat the chopped apples in a pan with the coconut oil and ½ tsp. cinnamon until softened. Can add a little water if you feel like the apples are sticking to the pan. Then in a blender mix the almond milk, protein powder, ground flax seeds, other 1/2 tsp. cinnamon, vanilla extract, frozen cauliflower rice and 1/2 of the cooked apples. Blend for at least 60 seconds. Then place in a bowl and top with the rest of the apples and almond butter.

Note: The smoothie is not cold if you add the apples straight from the stove. I like it like that but if you want it to be really cold wait for the apples to cool off or place in the fridge for a few!
