You will need…
Pumpkin Pancakes:
- 2 eggs
- 3 Tbsp. coconut flour
- 1 Tbsp. monk fruit
- 1/2 tsp. pumpkin pie spice seasoning
- 1 tsp. vanilla extract
- 2 Tbsp. unsweetened pumpkin from can
- 4 Tbsp. unsweetened almond milk
Cheese Cake Frosting:
- 1 Tbsp. cream cheese or DF cream cheese
- 1 Tbsp. powered monk fruit (granulated works too)
- 1/4 tsp. pumpkin pie spice seasoning
- 1 unsweetenedTbsp. almond milk
Toppings:
- 1 Tbsp. nut butter
- Sugar free maple syrup (preferably w/ monk fruit)
Directions:
Mix all pancake ingredients together and cook on the stove over medium heat. Mix all frosting ingredients together. Top pancakes with frosting, nut butter and SF maple syrup and enjoy!
