Zucchini Fries

You will need…

  • 1 zucchini
  • 1 egg
  • 4-5 Tbsp. almond flour
  • optional: 2 Tbsp. grated cheese or nutritional yeast
  • spices: salt, pepper, paprika, garlic powder, onion
  • powder
  • oil spray

Directions:

Slice zucchini into fries. Whisk 1 egg in a bowl. Mix dry
ingredients together well on a separate plate (almond
flour, spices and optional grated cheese or nutritional
yeast for a cheesy flavor). Dip zucchini’s in egg, then
bread crumb mixture and place on a baking sheet with
parchment paper. Once all fries are coated and placed
on baking sheet spray with oil spray (this helps them
get more crispy). Bake in the oven at 425 F for about
20-25 minutes. Flipping them 1/2 way is helpful but not
necessary. Take out and enjoy!

Quick Notes:

If you want another fat source in a meal you are using these with, I suggest using only 3 Tbsp. almond flour and cutting it with 2 Tbsp. of grated cheese or nutritional yeast.

If you want to increase the volume of the breadcrumbs to make more fries
then add the 2 Tbsp. of grated cheese or nutritional yeast to the 4-5 Tbsp. almond flour.

Nutritional yeast is commonly used as a cheese substitute. It is an acquired taste, just FYI! I use to hate it, now I love it 🙂
