Pesto Chicken Pesto Caprese Salad

You will need…

  • 1 medium- large tomato
  • 4 or more oz. of grilled chicken
  • 1-2 oz. fresh mozzarella
  • 1 Tbsp. pre-made pesto sauce (I like Trader Joe’s
  • Vegan Kale Pesto but so many super markets
  • have pre-made pesto sauces you can try)
  • 1-2 Tbsp. chopped fresh basil
  • sea salt to taste
  • balsamic or balsamic reduction

Directions:

Chop your tomato, chicken, fresh mozzarella and basil into cubes and combine in a bowl. Add pesto sauce and mix together. Drizzle with balsamic or balsamic reduction.

Note: the carbs/sugar in balsamic reduction add up so be mindful of how much you add or else it can start counting as a carb. I recommend sticking to about 1 tsp. for it to be free.
