You will need…
- 1 medium- large tomato
- 4 or more oz. of grilled chicken
- 1-2 oz. fresh mozzarella
- 1 Tbsp. pre-made pesto sauce (I like Trader Joe’s
- Vegan Kale Pesto but so many super markets
- have pre-made pesto sauces you can try)
- 1-2 Tbsp. chopped fresh basil
- sea salt to taste
- balsamic or balsamic reduction
Directions:
Chop your tomato, chicken, fresh mozzarella and basil into cubes and combine in a bowl. Add pesto sauce and mix together. Drizzle with balsamic or balsamic reduction.
Note: the carbs/sugar in balsamic reduction add up so be mindful of how much you add or else it can start counting as a carb. I recommend sticking to about 1 tsp. for it to be free.
