Air Fried Tofu Asian Salad

Makes 1 servings

You will need…

  • 1 cup tofu
  • 2 cups of chopped veggies of choice such as carrots, cabbage, jicama, pepper, radish, celery, broccoli. etc. (can buy pre chopped mixed veggies)
  • 1-2 Tbsp. peanut or asian dressing
  • 1 tsp. sesame seed oil
  • 2 Tbsp. coconut aminos

Directions:

Wrap tofu in a towel, put on a plate and place something heavy over it to let excess water drain from tofu.

Let sit for at least 20 minutes. Cube tofu and mix in a bowl with sesame seed oil and coconut aminos to season. Place tofu in an air fryer for 15-18 minutes at 400F.

While tofu is in the air fryer add your veggies to a bowl and mix with dressing. Once tofu is crispy add on top of your salad.

Note: Try and find a peanut or asian dressing that counts as a fat (10g fat or more) and is low in carbs <3g net carbs. However, if your dressing happens to be higher in carbs and lower in fat add another fat source to this meal like sliced almonds and count the dressing as a carb. Also, some asian dressings are low in both fat and carbs and therefore can be counted as a freebie if you stick to the serving size. In this case I would also add a fat source to this meal.
