Almond Joy Cauliflower Oats

Makes 1 serving (full breakfast with carb) – if having for lunch or dinner make sure to add a side of veggies

You will need…

  • 1/4 cup oats
  • 1/2 cup frozen cauliflower rice
  • 1 scoop chocolate or vanilla protein powder
  • splash of almond extract
  • 1 heaping Tbsp. ground flax
  • 1 heaping Tbsp. cacao powder
  • pinch of sea salt
  • 2 Tbsp. canned coconut milk (cream at top of can, not liquid part)
  • 1 small square dark chocolate chopped or 1 Tbsp. chocolate chips
  • unsweetened almond milk

Directions:

In a small pot add your cauliflower rice, oats, flax seeds, almond extract, protein powder, cacao powder, salt and just enough almond milk so that it combines and creates a texture you like. Add slowly because the cauliflower rice will also give it some liquid as it heats up. The amount varies depending on your protein powder. Mix together well and heat up until warm.

Add to a bowl and top with canned coconut milk cream and dark chocolate and enjoy.
