Apple Pie Chia Seed Pudding

Makes 1 serving (full meal with carb)

You will need…

  • 2 Tbsp. chia seeds
  • 1 serving vanilla protein powder (at least 20 grams protein)
  • 3/4 cup unsweetened almond milk (may need a little more or less depending on protein powder)
  • 1/2 tsp. cinnamon
  • splash of vanilla extract
  • 1 small apple
  • 1 Tbsp. nut butter

Directions:

Add chia seeds, protein powder and almond milk to a bowl and mix until combined. Place in fridge overnight or for at least 15-20 minutes.

Chop cup 1 small apple and toss with cinnamon and vanilla extract. Heat up on stove with a little water over medium heat until apples are warm and soft to your liking. You can also just pop the apples in the microwave for 90 seconds instead of using the stove.

Remove chia seed pudding from the fridge. Place apples over chia seed pudding and drizzle with a little almond butter.
