You will need…
- 2-3 chicken tender breasts (cooked in sesame oil or
- pre-cooked is fine too)
- 1/4-1/2 avocado
- 1/2 cup of shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup edamame
- 1/2 bag frozen cauliflower rice
- sesame seeds and scallions for garnish
Directions:
Chicken: if you are buying pre-made rotisserie or grilled chicken that totally works. You can add a little coconut aminos and/or sesame oil for flavor. If you are cooking yourself slice the chicken into cubes and cook in a pan with a little sesame oil.
Assemble bowl by microwaving frozen cauliflower rice. Add cauliflower rice to the base of the bowl. Top with carrots, cabbage, avocado, edamame, chicken, a sprinkle of sesame seed and scallions and sauce.
Sauce Instructions
You will need…
- 2 tbsp. coconut aminos
- 2 tsp. rice vinegar
- 1 tsp. sesame oil
- 1/2 tsp. roasted peanut butter
- 1 tsp. lime juice
- 1/2 tsp. maple syrup
- 1/4 tsp. minced fresh garlic
- 1/4 tsp. minced fresh ginger
- 1/2 tsp. minced scallion
Directions:
Mince the garlic, ginger and scallions. Whisk all ingredients together and top over Asian Style Buddha Bowl or other dishes!
*You can make a quick and more simple version of this sauce by simply combining just the coconut aminos, sesame oil and optional peanut butter.
You can also substitute the coconut aminos for liquid aminos, tamari or soy sauce.
