You will need…
- 1 Spaghetti Squash
- 1 pound chicken breast
- No sugar added BBQ sauce (I like this one)
- 1/2 small red onion
- 3 Tbsp. avocado oil
- Salt and pepper (to taste)
- Ranch dressing or cheese for topping
- Scallions (optional)
Directions:
Poke holes in the spaghetti squash and place it in the microwave for 5 minutes to soften. Pre-heat the oven to 375 F and roughly chop 1/2 small red onion. Once spaghetti squash is done in the microwave remove it carefully (it will be hot!), cut the ends off and slice in half lengthwise. Remove the seeds in the middle and place in the oven for about 20 minutes or until fully cooked (time may vary depending on size of squash).
While the squash is in the oven cook onions in 2 Tbsp. of oil in a pan. Once onions are a little browned add in another Tbsp. oil and your chicken breast (cut in cubes) to the pan with a little salt and pepper. Once chicken is cooked add BBQ sauce and mix in. After you remove spaghetti squash from the oven shred it with a fork to make spaghetti strands. Add BBQ chicken to spaghetti squash boats and top with ranch or cheese! If using cheese put back in the oven on broil for a few minutes until cheese melts. Top with scallions if you want!
