Blueberry Overnight Oats

You will need…

  • 1/4 cup uncooked oats
  • 1 scoop vanilla protein powder
  • 2 Tbsp. chia seeds
  • 2 Tbsp. blueberries (fresh or frozen) – I personally prefer frozen wild blueberries
  • 1/2 cup unsweetened almond milk
  • 2 Tbsp. coconut cream from a can of coconut milk.
    • This coconut milk is different than the one you would find in the milk section of the grocery store. The coconut cream is the solidified part of the coconut milk that is at the top of the can.
    • You can substitute coconut cream for coconut butter, coconut yogurt or any nut butter.

Directions:

Mix all dry ingredients (oats, protein powder and chia seeds) together well. Then add almond milk until all ingredients are combined. Add blueberries and mix in. Place in the fridge for at least 15 minutes or overnight. When removed from fridge mix 1/2 – 1 Tbsp. of the coconut cream into the oats. Then top with 1 Tbsp. of the coconut cream and enjoy!
