You will need…
- 3-4 carrots (not baby carrots)
- 2 eggs
- 1/4 cup oats
- 1 Tbsp. flax (optional but recommended)
- 1/2 tsp. cinnamon
- 1 tsp. vanilla extract
- 1/2 tsp. baking powder
- (optional) you can add monk fruit sweetener to taste if you prefer it sweeter ( I personally skip this)
- 1 Tbsp. nut butter or coconut butter on top
Directions:
Pre-heat oven to 375F. Roughly chop carrots and add to a blender. Blend on high speed for a few seconds or until carrots are shredded.
Add remainder of ingredients to the blender (besides nut butter or coconut butter) and blend just until evenly combined (batter should be a little chunky).
Spray a small baking tin or pan with oil and add batter to the pan.
Bake carrot cake for 30 minutes or until fully cooked. Should pass the fork test!
