You will need…
- 2 tsp. Ghee or butter
- 2 Tbsp. Buffalo sauce
- Shredded chicken
- Spaghetti squash
- 2-4 Tbsp. Shredded cheese (any kind. mozzarella or cheddar works well)
- Sea salt & oil spray
Directions:
Poke holes in the spaghetti squash and place in the microwave for 5 minutes. Remove from microwave (careful, it’s hot!) and cut in half lengthwise. Remove the seeds, spray with oil, add a pinch a sea salt to the inner part of the squash and place in the oven at 375 F for about 20 minutes or until fully cooked (this will vary depending on the size of the squash).
Remove squash from oven and shred with a fork to create spaghetti strands. Place strands from 1/2 spaghetti squash in a small skillet and mix in butter or ghee.
Mix 1 Tbsp. buffalo sauce with shredded chicken and place on top of spaghetti squash skillet. Drizzle another Tbsp. buffalo sauce on top. Add 2-4 Tbsp. cheese and place in the oven on broil until cheese melts. Make sure to watch closely so it doesn’t burn. Remove from oven and enjoy!
