You will need…
Makes about 2-3 servings
- 1 Tbsp. butter
- Chopped celery, onion and carrot mix (10 oz.)
- 10 oz. container of mushrooms, chopped
- 14 oz. bag cauliflower rice
- 1-2 Tbsp. of each thyme, parsley and rosemary (ideally fresh)
- spices: salt, pepper, garlic powder, onion powder to taste
- 1/4 cup broth (any kind works but I like bone broth for a boost of protein)
Directions:
Heat butter in a large pan. Add celery, carrots and onion mixture and cook until veggies are soft for about 5 minutes.
Add in mushrooms and cauliflower rice and cook for another 5 minutes.
Add in herbs, spices and broth, mix well and cover pan. Let simmer for about 15 minutes.
If there is excess liquids once the cauliflower stuffing is done cooking, remove it.
