Chia Berry Jam

Serving size: 1/2 cup (count as carb). Make sure to pair with protein, fat or veggies!

You will need…

  • 3 cup berries, any kind
  • 2 Tbsp. chia seeds
  • 2 Tbsp. fresh lemon juice
  • optional: 1 Tbsp. sugar free maple syrup or monk fruit

Directions:

Place berries into a pot and put stove on medium-high heat for about 7-10 minutes. Berries should come o a boil. You may need to add a Tbsp. of water if berries are sticking to pot.

Mash berries and simmer for 5 minutes.

Add chia seeds, maple syrup and lemon. Shut off heat and let sit.

Note: Store in fridge.
